With your hands, pull the garlic bulb apart into individual pieces. Make sure that your knife is nice and sharp, and your chopping board is clean. Carefully remove the outer skin of a garlic piece with your knife.
Cut the garlic piece in half. Thinly slice each half. Then chop the slices further into small bits.
